Okay…so I believe the serious Cajun chef would not call my attempt Gumbo. But I was proud of my start.
After putting Titus down to bed tonight, I realized my family would be arriving home in an hour and I’d not considered what to serve them for dinner. After rummaging around in the pantry and freezer I whimsically opted to overcome a personal fear…making roux…a necessary step in making Gumbo and other delicious Cajun dishes. Read more…

As a kid growing up in Alabama, a generous portion of each of my years of U.S. History studies was dedicated to the Civil War. I’ve always preferred to understand trends and the bottom line, rather than to retain details, so unfortunately I don’t remember much about these months of studies, other than a few of the overarching reasons for the war. (Like any good Alabama-educated girl, I recently had a debate with a friend regarding states’ rights versus federal governmental rights.) Read more…
